Grilled Pork Tacos with Fresh Salsa Recipe

There’s something magical about tacos hot off the grill—and these Grilled Pork Tacos with Fresh Salsa bring all the flavor, crunch, and freshness you could want. Juicy marinated pork, lightly charred on the grill, piled high in warm tortillas and topped with zesty homemade salsa... yeah, these are next-level tacos. They’re easy enough for a weeknight and tasty enough to serve at your next backyard BBQ. Let’s taco ‘bout how good these are and get grilling!
Why Grilled Pork Tacos?
Grilling gives pork a smoky char that’s hard to beat, while locking in its juicy, savory flavor. Pair that with a bright, homemade salsa and you’ve got a taco that’s bold, fresh, and totally satisfying. It’s the perfect mix of comfort food and fiesta flair.
When grilling thin or small cuts of pork, control and even heat are everything. The Braize Adjustable Grill Basket is perfect for keeping marinated pork pieces in place while they cook evenly—no flare-ups, no meat slipping through the grates. And a pair of good grilling tongs will help you flip and handle everything easily. Trust me, these tools make taco night a breeze.
Ingredients
For the Pork Marinade:
- 1½ pounds boneless pork shoulder or tenderloin, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon chipotle in adobo (chopped) or chili powder
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Fresh Salsa:
- 2 medium tomatoes, diced
- ½ small red onion, finely chopped
- 1 jalapeño, minced (remove seeds for less heat)
- ¼ cup chopped cilantro
- Juice of 1 lime
- Salt, to taste
For Serving:
- 8 small corn or flour tortillas
- Crumbled queso fresco or shredded cheese (optional)
- Avocado slices or guac
- Lime wedges
Instructions
1. Marinate the Pork
- In a bowl, whisk together olive oil, lime juice, chipotle or chili powder, garlic, cumin, paprika, salt, and pepper.
- Add sliced pork and toss to coat. Cover and marinate in the fridge for at least 30 minutes, or up to 4 hours.
2. Make the Fresh Salsa
- In a bowl, combine diced tomatoes, onion, jalapeño, cilantro, and lime juice.
- Season with salt, mix well, and set aside. Letting it sit while the pork grills helps the flavors come together.
3. Preheat the Grill
- Heat the grill to medium-high (about 400°F).
- Lightly oil the grates or place your Braize Adjustable Grill Basket on the grill to preheat.
4. Grill the Pork
- Add the marinated pork slices to the Braize Adjustable Grill Basket in a single layer.
- Grill for 2-3 minutes per side, or until cooked through with nice char marks.
- Transfer to a cutting board and let rest for a few minutes, then chop into bite-sized pieces.
5. Warm the Tortillas
- Toss tortillas on the grill for 15-30 seconds per side to get them soft and lightly charred.
6. Assemble and Serve
- Load each tortilla with chopped grilled pork, a spoonful of fresh salsa, and any extra toppings you like.
- Serve with lime wedges and dig in while everything’s hot and fresh!
